DIY #2: Graham Tiramisu Refrigerator Cake

I consider December as a "Celebrations Month." Not only would there be a number of Christmas parties to go to, but there are also several personal celebrations this month. The first day of the month kicked off with SI's 6th month. After which, this was followed by JF's birthday, then, our anniversary as BF-GF. This is also SJ's birthday month. Would you believe that these 4 important celebrations transpired in less than 10 days?! Though we didn't celebrate each event in a grand way, I just made sure that we have something special on the table.

As I mentioned in a previous post, the cake completes the occasion. But since family occasions happen one after the other this month, my mom and SJ thought of making a refrigerator cake instead of buying one from a pastry shop. Not only does it tastes yummy but making it is a breeze even for a clueless cook like me. It was such a delightful breather from the traditional birthday cakes.

Affordable ingredients for a delicious homemade cake

Here's the Graham Tiramisu Refrigerator Cake recipe of my mom and SJ:

2 packs of 200-g M.Y. San Grahams
1 pack of M.Y. San Crushed Grahams
1 300-mL Carnation Condensada
1 250-mL Nestle All-Purpose Cream

Procedure:

1. Thoroughly mix the condensed milk and all-purpose cream in a mixing bowl. Set this aside.
2. Carefully lay out the Graham crackers flat on a rectangular pan. Fill the gaps with crushed Grahams.
3. Spread a layer of the condensed milk and all-purpose cream mixture on top of the cracker layer.
4. Repeat steps 2 and 3 until you run out of Graham crackers.
5. Fully cover the topmost layer with crushed Grahams.
6. Place inside the refrigerator before serving.

Birthday Cake: Graham Tiramisu Refrigerator Cake

You may also top this icebox cake with additional fruit slices such as mango and peach slices. Without sacrificing the taste, this is such an affordable alternative to cakes sold at commercial bakeshops. You may even use it as a birthday cake just like what we did for the birthdays of JF and SJ. It is also a great dessert to pair with coffee for your visitors this Christmas season. Try this out one time and you'll agree that it is undeniably a wise choice.
